Ingredients
shrimp mixture
12 ounces Jumbo Shells
1-2 pounds Fresh Shrimp
2 cups Broccoli Florets (frozen, steamed then chopped)
1/2 Lemon for Squeeze
ALFREDO SAUCE
3 Tablespoons Unsalted Butter
1/2 Sweet Onion
3 Cloves Garlic Minced
1/3 Red Bell Pepper
1 cup Heavy Cream
1 ¼ cups milk of choice
1 cup Freshly shredded Parmesan
1 cup Freshly shredded Mozzarella cheese
Salt and pepper to taste
Description
Step 1 | Preheat your oven to 350°. Cook pasta shells according to package instructions, just until al dente. Drain water and lay shells out on a large cookie sheet lined with parchment paper. Let shells cool completely. In a large pot of salted boiling water, cook pasta shells until al dente (pasta shells should be tender, but firm and chewy). Drain and return shells to the pot, then lightly toss in olive oil with a little seasoning. Set aside and let cool.
Step 2 | In a large bowl, begin stuffing your shrimp mixture into shells. stir together ricotta, Italian cheese, and egg, and season with salt and pepper. Stuff mixture into shells.
Step 3 | In a saucepan or skillet over medium-low heat, melt butter. Add cream and bring to a simmer, then stir in Parmesan and season with pepper.
Step 4 | Pour 2/3 of the sauce into an oven-proof skillet or baking dish, then arrange stuffed shells on top of sauce. Spoon remaining sauce over the shells and sprinkle with more cheese.
Step 5 | Bake until cheese is melted and bubbly, around 16 to 20 minutes. Garnish with fresh basil or parsley, and serve.
FOR HOMEMADE ALFREDO SAUCE
Combine butter, garlic, heavy cream and milk in a saucepan over medium heat. Bring to a simmer. Remove from heat and stir in Parmesan and Mozzarella cheese. Season with salt and pepper, to taste.
FOR STUFFING SHELLS: In a large bowl add chicken, garlic powder, salt and pepper and chopped broccoli. Toss to combine. Pour in 1 cup Alfredo sauce and stir together. Add a spoonful of Alfredo sauce to the bottom of a greased 9x13-inch baking pan. Fill shells with a large spoonful of chicken and broccoli mixture and place in prepared pan.
Pour remaining Alfredo sauce evenly over the shells. Sprinkle tops with Mozzarella and Parmesan cheese.
Bake, uncovered, at 350 degrees F. for 25 minutes or until warm and bubbly. Serve and enjoy!
