Salmon & Potato Basil Soup

This lovely salmon soup is warming and comforting without being overly fishy or heavy, which I love. It can be made with either fillets, or the meat left on the bones of fish.

Ingredients
Olive Oil
Butter
Seasonings of Choice
1 lb of Salmon (3-4 Fillets)
1 medium Sweet Onion
2 tbsp Dried Oregano
2 Bay Leaves
2 quarts of Broth
2 Carrots
2 Russet Potatoes
1 cup grape tomatoes
4-6 Basil Leaves
1 can Coconut Milk
Instructions
Prep Ingredients | Thoroughly rinse and pat dry your fresh produce. Peel and chop up your onion, potatoes and carrots then set aside. Cut your grape tomatoes into quarters. Remove the salmon skin and cut into medium-sized chunks. Season the fish lightly with salt and pepper before splitting into 1/3 and 2/3 portions and setting aside.
Start Your Soup | In a soup pot add your olive oil and onion, cook until wilted and transparent, but not browned. Add the bay leaves, oregano, carrots and potatoes followed by the broth. Bring your pot to a light boil before adding in the 2/3 portion of chopped salmon . Reduce the heat and simmer gently for 30 to 45 minutes, or until the potatoes are tender. Stir occasionally.
Salmon Bites & Basil Tomato Drizzle | Olive oil your saucepan then add the remaining 1/3 portion of chopped salmon. Aim for a nice sear, cook evenly before removing from the pan.
In the same pan, melt down two (2) tablespoons of butter and toss in the tomatoes and fresh basil. Cook until the tomatoes are tender, and set aside.
Serve It Up | Carefully spoon servings of soup into your bowls, being careful not to break apart the fish chunks in the process. Top each bowl with 2-3 seared salmon bites and a spoonful of that tomato basil butta. Lastly, drizzle a little coconut milk into each bowl. Your soups will develop a cloudy appearance, that’s what we want. Enjoy!
Chef Notes: Chicken or veggie broth are good substitutes for the seafood broth.
